My variation on this! I added extra raw veggies: carrots, napa cabbage, and baby spinach- yum! Perfect vegetarian dinner for a busy night!
My son would love that! He is a noodle lover.

Made this today and my vegetarian brother liked it, so did everyone else! Thanks Susan! Mmm, leftovers tomorrow alongside some leftover flank steak :)

It's such an easy recipe to vary the ingredients in. Great cold especially!
