Our local Wegmans has had some beautiful organic kale lately. I've made some delicious dinners this past week with it that have been enjoyed by everyone except for Lukas (not a surprise but I keep trying new things with him).
Pasta with kale and sausage (recipe from our CSA)
I've made this twice in the past two weeks. The second time I added some amazing Runner Cannellini Bean I got from Rancho Gordo. I cooked the beans in the crockpot (no soaking needed) and then added two cups at the end of the Pasta w/kale and sausage recipe. Yummers! We had no leftovers and the (big) kiddos raved about it! Yay! I know the rest of the beans won't last long around here! We are major bean lovers! Did you hear the Jan. 25 Splendid Table? They interviewed the author of Beans: A History (added to my never-ending booklist) which I also spotted on The Rancho Gordo blog.
Lively Up Yourself Lentil Soup Recipe
I made this last night and dh made some whole wheat green onion biscuits. When I read Heidi Swanson's recent post about this recipe I knew I had to make it. I used my favorite French lentils. Delicious soup! The saffron yogurt is a wonderful touch. Again, a winner around here that will be repeated over and over! I'm having some for lunch today too!
